Is it ok to sear meat then refrigerate overnight then cook in crock pot next day?

Yes. I frequently do up a slow cooker meal the evening before, and then refrigerate it. That way all I have to do is pop the insert into the electrics, and I'm done. Adjust cook times if necessary,for starting out cold.
